The Federation of Italian Chefs (Federazione Italiana Cuochi - FIC) was formed in 1960 in Milan, Italy for the purpose of preserving and promoting the authenticity of Italian cuisine. In 2000, the FIC expanded to the United States, bringing with it the resources and knowledge of Italian chefs and restaurateurs across the globe. Together, these two organizations together have more than 19,000 members worldwide.
The Federation of Italian Chefs is the preeminent worldwide association dedicated to the promotion, dissemination and education of the finest Italian cuisine through our member chefs and restaurants.
Globally, the FIC includes over 19,000 qualified Italian cooking professionals, including chefs, restaurateurs, culinary teachers and culinary students. The FIC has recently expanded to the United States, and it has already assembled a number of great Italian chefs and restaurants from across the country.
FIC members represent the best Italian restaurants in the country. This excellence is maintained through independent inspections of each of the FIC member restaurants, based on a combination of an authentic Italian menu, Italian ingredients, food quality, preparation and restaurant décor.
The U.S. section of the FIC was founded with principles and promises that benefit each of its members and the community as a whole:

Educate and publicize the virtues of Italian food and the quality of Italian products to U.S. consumers to grow and nurture the appeal of Italian cuisine in the U.S.
